Date powder is ground whole dates: a single-ingredient way for cafés and beverage brands to sweeten drinks without syrups. Its sugars disperse in a drink, but the fibre does not fully dissolve, so it behaves differently from a syrup [1–3].

How to Get a Smooth Drink With Date Powder

  • Make a paste first. Whisk the powder into hot espresso or a splash of hot water before adding milk.
  • Froth or blend. A frother beats a spoon; blend cold drinks for 30–60 s.
  • Choose a fine powder. The finer the grind, the silkier the drink.
  • Respect the dose. About 10 g per 250 ml. Beyond 20 g it turns heavy; a pinch of salt or cinnamon lifts the flavour.

Blend 200 g date powder with 200 ml hot water, rest 10 minutes, blend again: about 20 lattes per batch. Keep chilled and labelled. For clear drinks, use a thinner 1:3 base and strain it. 20 g base = 10 g powder.

Date & Cardamom Creamy Latte

A creamy coffee drink with date syrup or date sugar, milk, evaporated milk and cardamom.

INGREDIENTS

·        10 g date powder

·        30 ml hot espresso

·        200 ml milk + 20 ml evaporated milk

·        A pinch of ground cardamom

HOW TO USE THIS RECIPE

1.    Whisk 10 g date powder and a pinch of ground cardamom into 30 ml hot espresso until smooth.

2.    Steam 200 ml milk to 60–65 °C; add 20 ml evaporated milk for a creamier cup.

3.    Pour over the date espresso, finish with a light dusting of cardamom and serve.

Tahini Date Latte

A dairy-free espresso drink built on a tahini-date syrup with salt.

INGREDIENTS

·        10 g date powder

·        10 g tahini

·        A pinch of salt

·        30 ml hot espresso

·        200 ml oat milk

HOW TO USE THIS RECIPE

1.    Whisk 10 g date powder, 10 g tahini and a pinch of salt into 30 ml hot espresso to a smooth paste.

2.    Steam 200 ml oat milk to 60–65 °C to keep it dairy-free.

3.    Pour over the paste, stir once and serve.

Iced Salted Caramel Latte with Date Caramel

A chilled latte where a Medjool date, almond butter, salt and vanilla create a date-based caramel.

INGREDIENTS

·        15 g date powder

·        8 g almond butter

·        Sea salt and a drop of vanilla

·        60 ml hot espresso

·        150 ml plant milk, 100 g ice + ice to serve

HOW TO USE THIS RECIPE

1.    Whisk 15 g date powder, 8 g almond butter, a pinch of sea salt and a drop of vanilla into 60 ml hot espresso.

2.    Blend with 150 ml cold plant milk and 100 g ice for 20–30 s.

3.    Pour over fresh ice in a tall glass and serve.

INGREDIENTS

·        15 g date powder

·        25–30 g vanilla protein powder

·        15 g almond butter

·        30 ml cold espresso

·        250 ml milk and 100 g ice

HOW TO USE THIS RECIPE

1.    Blend 250 ml milk, 15 g date powder, 25–30 g vanilla protein, 15 g almond butter and 30 ml cold espresso for 10 s.

2.    Add 100 g ice and blend on high for 40–60 s.

3.    Adjust with milk, serve at once, and check the protein powder’s allergens before listing.

Sourcing Date Powder: Supplier Checklist

Ask your supplier for a spec sheet and samples, and check:

  • 100% dates, with no rice flour, maltodextrin or anti-caking agents.
  • Particle size and moisture. A finer grind means smoother drinks; lower moisture means less clumping.
  • Food safety. Microbiological specs, a certificate of analysis per batch, and certification such as BRCGS, FSSC 22000 or IFS (plus organic, halal or kosher if needed).
  • Variety affects colour and flavour; ask how batches stay consistent.
  • Resealable, moisture-barrier bags: small packs for cafés, bulk for manufacturers.
  • Bar test. Run samples through your own recipes three times before signing.

Date Powder FAQ for Cafés and Beverage Brands

Why is my date latte grainy?

Dry powder went into the milk. Make a paste with hot espresso first.

Is date powder vegan and free from added refined sugar?

A 100% date powder is vegan and adds no refined sugar, but it is not sugar-free: dates contain natural sugars. The glycaemic-index study [5] covers whole dates, not drinks, so don’t use it for health claims, and have menu claims such as “no added sugar” checked for your market.

How should a café store date powder?

Airtight, cool and dry, away from steam. Reseal the bag after every use.

Can date powder be used in ready-to-drink beverages?

Yes, in blended or milk-based formats, but fibre settles over shelf life. Run stability trials; for clear drinks, use a syrup or extract.
